Something New

Two things actually! About three weeks ago I bought my first BRAND NEW car!

2010 Toyota RAV4 Sport

Most of you already know about it, but I had to show it off. It is a 2010 Toyota RAV4 Sport and I LOVE it! My little Volkswagen was costing me a pretty penny back in February and it was about to hit 90,000 miles. I was probably would have ended up putting in about half of what it is actually worth to keep it moving. So we started look online and remembered that Toyota still had 0% financing. Thankfully my dad was also thinking about buying a new car and he just could not pass up Toyota's deal. We worked together to try and get the best deal at Wiese Toyoto in Taylorsville, Indiana. They let him take the 2010 Highlander Limited home on Friday night to test drive and on Saturday he bought it. The next task was to find the exact model I wanted, unfortunately they didn't have it on the lot. ha It took a week to find and back to Indiana, but on Saturday, March 27 I drove away in my new, white RAV4 with moon roof (major requirement).

By Monday it was already full of Girl Scout crap, but I'm doing my best to keep this lovely car looking good! Still has that new car smell too! :)

New Favorite Recipe
It was time to shake things up again and I wanted to make Thai food last weekend. I have so many cookbooks, but I hate when I have to purchase all these weird ingredients that we use once. So Dylan started to looking online for something easy and delicous. He scored big time!

Thai Chicken Stir-Fry with Spicy Peanut Sauce

2 whole chicken breasts, skinned, boned & cut into bite-size pieces
1/2 c. peanut butter
1/2 c. water
2 tbsp. soy sauce
1 tbsp. brown sugar
2 tbsp. peanut or vegetable oil
2 or 3 cloves garlic, minced
1/2 tsp. crushed red pepper
3 to 4 c. sliced broccoli or spinach

In a small bowl, blend peanut butter, water, soy sauce and sugar; set aside. In a wok or large skillet, heat oil over high heat. Add garlic and pepper; stir-fry 30 seconds. Add chicken, stir-fry until firm and white, about 5 minutes. Add broccoli or spinach, stir-fry until bright green, about 3 minutes. Stir in peanut butter mixture. Cook, stirring constantly until sauce is smooth, about 3 minutes. Serves 4.

We had everything we need except the broccoli. Instead of adding spinach we just made a salad. For those of you that are scared of spicy but love peanut butter, no worries! Put as little or as much red pepper as you want. We cooked 3 whole chicken breast and had just enough sauce. You will have plenty for leftovers, trust me.

I love trying new recipes, but its even better when I find a quick, easy and yummy recipe with simple ingredients. Don't you?

Wedding Season

I'm sure many of you, like me, have received all your "Save the Date" cards and invitations. It's officially wedding season! Yesterday on our walk to Eden Park's small pond we saw two wedding parties taking photos. It was a beautiful day for a wedding here in Cincinnati. And today one of my best friends got engaged! CONGRATS JENNA!

I have a lot of catching up do on this blog. Work has been crazy for the past three weeks so I've been slacking on my updates. Let's go back to St. Patrick's Day weekend. We made our way on Chicago to celebrate with friends. On Sunday I went to a wedding shower for my friend Molly. Molly and Bob are getting married this June in a suburb outside of Chicago. I'm so excited for the weddings this summer because I will get to see my girlfriends twice! As many of you know, all of my girlfriends from college live at least 3 or more hours away from me. We can't wait for all of the wedding festivities to spend some time together and celebrate.

What is a wedding shower without any games!?!

Not only am I excited to celebrate with all my friends, but I can't wait start seeing more wedding photos on all the photographers blogs! I follow more than 10 different photographers and I love seeing their engagement and summer wedding photos. My absolute favorite photographers from Indy are Bobbi and Mike. I met them when they photographed a wedding at the Music Mill when I was an intern. Not only are they amazing photographers, but they have a great time doing it. Another favorite, Megan W Photography. She took Peyton's engagement and wedding photos last year and Molly hired her as well. Here are some of the photos she took for them.

Beautiful, right? No matter where they go to take photos, they always make each setting look amazing. It is going to be a busy summer, but I can't wait!
